Yes, my older brother ate Spam in his poor days when he was first married. I remember Spam in our house a child, but I don’t remember eating it. Mother (yes, we called her ‘Mother’) never cooked it, so maybe it was there for my brother? It’s awesome that Chefs are cooking with Spam!
HA! There are a number of Chefs using Spam in their cooking – it’s a gimmick but sometimes it’s pretty darn good! These “retro” recipes are to be so fun to read – if perhaps not to make!
I am a huge fan of the retro recipes and looking through the old books. I told my daughters that I would like ld cookbooks from the 60s and 70s for my birthday next year )
I’m still a fan of Spam, and occasionally buy it to include in sandwiches. For some reason, it has now become surprisingly expensive in the UK. 🙂

Pete, it’s pretty universally panned by foodies, but there are Chefs doing unique things with it and sometimes it’s fun to see what they used to make with it!
