Bacon Price$ $oar! My “Bacon-Wrapped Mac’n’Cheese Meatloaf” Recipe – And $ticker $hock!

Get Ready For Some Bacon $ticker $hock!

First of all, thanks to my friend and fellow “foodie” Sean, who sent me this emergency message:

“We may be in HUGE trouble…”

And boy, was he right!

He linked me to this story from CNN, and the news for bacon lovers is catastrophic!

Did you know that bacon prices are higher now than they’ve been in FORTY YEARS?

As CNN reported:

“That hankering for pork chops is costing you about 7% more than 12 months ago. The average price for that slab of bacon to accompany the Sunday morning spread has jumped nearly 28% during the past 12 months! “

So How Did This Happen?

CNN’s report points to a cause we can all understand, because we have all lived through it – the pandemic!

“The supply chain issues and inflationary pressures that have become all-too common in these pandemic times certainly have played theirs roles in the pork price hikes.”

That’s right: the aftershock of the worldwide pandemic resulted in less pork being processed at a time when people were buying more – perhaps because bacon is without a doubt a “feel good” food, and people needed something to cheer them up!

Now that I have suitably terrified you, let me at least offer up a few ways to maximize your “bacon enjoyment” – how about a “bacon-wrapped, mac’n’cheese-stuffed Meatloaf?

Here’s A “Bacon-Wrapped, Mac’n’Cheese-Stuffed Meatloaf” Recipe!

If I’m going to pay through the snout for bacon, I’m going to make it memorable, and this is the way to do it!

The best part is, this is pretty easy to make! Just make a meatloaf blend like this one that “Allrecipes” offers up.

  • 1 ½ pounds ground beef  
  • 1 egg  
  • 1 onion, chopped  
  • 1 cup milk 
  • 1 cup dried bread crumbs 
  • salt and pepper to taste 
  • 2 tablespoons brown sugar 
  • 2 tablespoons prepared mustard 
  • ⅓ cup ketchup

Cook your mac’n’cheese separately and have it ready to go – this is a shot of the special version made at Chez L’Ami Louis in Paris.

Next, layer bacon in the bottom of a loaf pan…take your meatloaf mix and press half of it into the pan – then add your mac’n’cheese – and then press the rest of the meatloaf mixture on top…

Lay more bacon on top, tucking it all in together to form a nice seal, and bake at 350 degrees for about an hour…and you will end up with this:

Tell me you won’t spend a little extra for this?

And if you like “bacon wrapped” things:

It’s a terrific “bacon-wrapped, egg-stuff Avocado” – and I made it!

Well, mine turned out a bit differently than the shot above…

  2. Are you kidding me? Mac and cheese stuffed meatloaf wrapped in bacon? Die and go to heaven. This is exactly what Sunday night’s dinner will be before the Patriots & Buccaneers game. Yes!!

  4. Practically everything tastes better with bacon. I think I’m going to try that bacon-wrapped macaroni and cheese meatloaf recipe. So many great flavors in one dish!

  5. Bacon prices are static here, for the time being at least. I would devour that meatloaf, but I might pass on the Bacon/Oreos. Far too sweet!
