Welcome To “Retro” Las Vegas!
This is the view of the Las Vegas Strip from my room at the Cosmopolitan Hotel – and whenever I go to Las Vegas I feel like I’m hanging out with The Rat Pack!
Our room at The Cosmopolitan overlooksed the fountains at The Bellagio – with a great view of some of the Vegas strip…enjoy!
That is the Eiffel Tower at The Paris across the street…we were in Las Vegas to see Kelly Clarkson performing her “Chemistry” residency at Planet Hollywood – here is her performing live on stage with her rousing finale of the show – enjoy “Stronger” and “Since You Been Gone!”
Las Vegas can be a lot of fun…but my world was “all shook up” by the news that the classic “Elvis” wedding ceremonies were going away!
I applaud everyone who had had an “Elvis” wedding, but here’s the story of why they may go away forever:
There is so much history in this city – and now a restaurant wants to bring back some classic “retro” food as well!
A new “pop up” restaurant called “Retro” has a menu filled with classic dishes from your childhood! Here’s how Mandalay Bay describes it:
“Vintage Flavor. Modern Flair.”
Inspired by the best of the 80s, 90s and now, Retro by Voltaggio is the bomdiggity of dining experiences unlike any other in Vegas. Taste the rad with a remix of America’s favorite dishes with an electrifying throwback spirit.
Chef Michael Voltaggio has a great sense of humor, and the restaurant has some fun retro displays of vintage “stuff” to look at when you enter:
Here is a quick video of some of the stuff on display:
Really fun “retro” displays surround the dining tables – and as for the menu, “retro” is also on full display as well – here is their signature “retro” dish and it’s amazing!
Voltaggi-O’s!
For anyone who grew up with Chef Boyardee canned spaghetti-o’s, this was a trip down memory lane!
Yes, this classic canned food from our childhood has been lovingly restored to taste VERY SIMILAR to the original – and it is delicious, centered by a great and giant meatball!
Here’s how they serve it:
Here’s how they describe in on the menu:
“House-made O’s, arrabbiata butter, giant meatball, new school version of an old school canned favorite…”
To see more of their great menu – including pepperoni rolls and wild deviled eggs, click here for my “all food all the time” website, “Bite! Eat! Repeat!” for the whole menu!
There are so many fun things on that menu – and I love sharing stories about classic Hollywood restaurants as well,, like this one:
Musso & Frank is Hollywood’s oldest restaurant, more than 100 years old, and if you click on my story you can see more about their history, their cookbook, and I made several classic “retro” dishes here:
And here’s an Actor who became a great TV Host based on his love of food and travel:
Stanley Tucci loves to cook as well, so I made his family’s Chicken Caiiatore recipe – here’s the recipe:
About Stanley Tucci: you may know that I became obsessed with a dish he cooked on his CNN travel series.
How obsessed?
THIS OBSESSED!
I made “Spaghetti alla Nerano” with some added “Zoodles” as well – click here for this amazingly delicious recipe!

Sorry, I pressed the wrong button. The Kelly video is fantastic with all the yellow lightening. I only know spaghetti Os from books.

They are probably the worst canned food sold here, but this lovingly paid homage in a delicious way! Kelly’s concert was so much fun and afterwards we met her band for drinks – as you do in Las Vegas!
