Thanks to this crazy, creative Chicago restaurant, you can go “flavor tripping”! Every six weeks the menu changes, with all sorts of creative shenanigans going on – here is a look at the most recent menu offered up: our “flavor tripp-ing” with a heavy metal twist!
Owner/Chef Homaro Cantu is “Imagining New Gastronomy” – hence the name: iNG. As he says: “Come experience the wildest and most entertaining dining experiences in Chicago. iNG features a nightly and dynamic flavor tripping tasting menu!”

iNG’s Rock and Metal Menu!
iNG is just finishing up a menu that celebrates heavy metal with some fantastic food – and four of us got the chance to eat it – let’s go!
Start With Your Backstage Pass:
You begin with your own backstage pass for the food show about to begin, and a drink…which in this case is coated on the rim with a spicy oreo cookie-type substance…
Time To Go Flavor Tripp-iNG!
The unique aspect of the meal here is what they call “flavor tripping.” What it involves is a miracle fruit — aka the Miracle Berry — a rare plant that alters your flavor receptors. Lemons will taste like candy.
They prove this by giving you a spoon with a chalky substance on it. You eat it, then bite into the lemon, which suddenly tastes sweet like lemonade. Yes, it is cool. And at certain times int he meal you will continue to eat the miracle berry, or it will be sprinkled on your food – all for the purpose of turning sour and savory into sweet…a very cool thing.
OK, the flavor tripping is underway, time to dig into some rock ‘n’ roll food!

Let’s begin with fried oysters with cucumber and kombu, as you can see they have some miracle berry to add to it – you eat one oyster without it, then one after – to see how the flavor profile changes – you are “flavor tripping! The dish is served with a drink of Sea Water Gin and cucumber…
Deep Purple Poutine!
While I love fried oysters, it was this dish that sent me to the moon. Purple potatoes, aged cheddar and pork belly – all served up in a tasty plate of goodness and oh my…
This was delicious, served with Belhaven Scottish Ale, a fine beer to bring out the flavors of the poutine…
Seek And Destroy!
Now, here we go again: an amazingly creative plate full of flavor – in this case, chorizo lollipops with cippolini onions, chevre and dates…
This dish was served with a spanish wine…one of the great aspects of this tasting menu – all dishes come with a paired beverage…
WAR PIGS!
This beautiful dish is pork loin with a cornbread DUST and mac and cheese POWDER.
Yes, it is – mac and cheese POWDER – and served with a Napa valley red.

Next is a cool mochi and creme fraiche with vanilla – and those really cool “things” coming out of the dish…served with a Japanese sweet stout!
Back In Black!
And of course you end up with AC/DC – and some donuts with salted whipped cream and espresso – this band never tasted better!
